Courgettes

I know I said that I wasn't going to grow any veg this year (too little room), but I couldn't resist a few courgettes. I found 5 seeds left over from last year in my seed box, so thought I'd give them a try. I didn't think they would come up - but all 5 seeds have now germinated.

Last summer, we had so many courgettes from the few plants I had.  I grew them in containers, in full sun. They got no special attention at all, and yet they did so well. They were marvellous - very tasty, and we do enjoy them. So - I need to get a few more pots to put them in ! Pretty soon we won't be able to move out there.

Chicken

Vegetarians - please look away !

I love chicken.  Tonight's supper involved chicken, lemons, garlic & herbs.

Add a baked potato, and some salad - delicious !

 

Chickeny Thingy

Did I mention that I love chickens...and eggs...and chickeny thingies ? Well, here are 2 of my favourite things - eggs and a chickeny thingy. My daughter gave this to me a few years ago. I absolutely love it !! It is put to good use, and eggs are in and out of it at a rapid rate.

I really like that green (must be the gardener in me). In fact, a lot of my kitchen accessories are green.

Useful Eggs

One of my favourite foods is eggs. They are so very useful ! Marvellous on sandwiches, great for baking, snacks and garnishing, and so delicious soft-boiled with lovely toast soldiers. I go through more than 3 dozen a week. I just couldn't do without them. Here is a favourite recipe of mine using hard-boiled eggs. It's a variation of Devilled Eggs - the grandchildren love this recipe.

6 hard-cooked eggs, peeled and cut lengthwise
3 to 4 tablespoons Light Mayonnaise or Salad Dressing
1 tablespoon sweet red pepper - very finely chopped
1 tablespoon green onion or scallions - finely chopped
1 tablespoon celery - very finely chopped
1 teaspoon yellow mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
Paprika for garnish

Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add the mayonnaise, red pepper, onion, celery, mustard, salt and pepper and mix thoroughly. Fill the empty egg white shells with the mixture and sprinkle lightly with paprika.

Cover lightly with plastic wrap and refrigerate for up to one day before serving.

Easter Sunday and something different !

It's Easter Sunday. This year, the family wanted something other than the traditional roast with all the trimmings. So we obliged. Not the usual Easter fare, but it went down just as well !

Son-in-law wanted and made a wonderful curry.

For those that couldn't eat the hot curry, I made lemon & garlic chicken.

A very easy recipe - delicious. Fry loads of garlic in olive oil, add chicken pieces and brown them. Then squeeze the juice of a lemon over.  Let it cook - keep turning for about 35 - 40 minutes. Add salt & pepper. Wonderful flavour.
