It's Easter Sunday. This year, the family wanted something other than the traditional roast with all the trimmings. So we obliged. Not the usual Easter fare, but it went down just as well !
Son-in-law wanted and made a wonderful curry.
For those that couldn't eat the hot curry, I made lemon & garlic chicken.
A very easy recipe - delicious. Fry loads of garlic in olive oil, add chicken pieces and brown them. Then squeeze the juice of a lemon over. Let it cook - keep turning for about 35 - 40 minutes. Add salt & pepper. Wonderful flavour.
